You guys, on Monday night around 9:00 I’m normally typing up a storm to get this blog up for you. Last night was a sad effort. Ben reminded me, but for some reason after going to the gym and eating dinner the couch refused to let me go and I fell asleep.
Good news is I’m on here earlier than normal this morning to get these meals out to you guys as soon as possible, so here we go!
Slow Cooker Pot Roast
My absolute favorite thing to throw in the crockpot in the morning. It’s fairly easy and super yummy. I used a chuck eye roast and added carrots, onions and shallots. There are a million and one recipes out there for pot roasts so I will let you pick one you like, but don’t be afraid to bring out this delicious tool on days that you won’t have time in the evening to make something.
Veggie Burgers (again)
Yes I know in meal planning week 4 we had veggie burgers, but we enjoyed them so much we are going to be trying a black bean burger from Trader Joe’s frozen section this week. I’m going to be topping the burgers with mashed avocado and some sautéed peppers and a side of roasted red potatoes and Brussels.
Butternut Squash Stuffed Shells
Yum Yum Yum. This recipe is vegan, so feel free to substitute ricotta for the cashew cream if you are not vegan or dairy-free. Thank you Love and Lemons for this delicious recipe we are super excited to try it this week.
Tortellini Soup with Sausage and Spinach
Of course there had to be a soup recipe, I mean it is winter in Indiana after all. This soup is great because you can easily leave out the sausage to make it vegetarian or choose a cheese free tortellini and it’s a dairy- free soup.
Burrito Bowls
You know that restaurant Chipotle that everyone loves? Did you know it’s superrrr easy to make a burrito bowl at home? No need for a recipe just prepare all the ingredients you would normally add…rice, lettuce, protein, cheese, veggies, salsa, sour cream, gauc. Throw it all in a bowl and you can even have some chips on the side, free of charge.
