Thanksgiving is approaching, can you believe it!? Thanksgiving is the most tasty of all the holidays(in my opinion). Mainly cause I love a good pecan pie. I’m already planning on the things I’m going to make for each of our celebrations with family. I am loving all the tips and tricks that are being shared over on Life is but a Dish.
Meanwhile, it’s another week and another chance for me to share a few meal ideas with you all.
We (Ben) sort of threw this recipe together based on a few we had tried before. Basically cook your choice of pasta (we used bowtie noodles) and add in sautéed veggies (onions, peppers, mushrooms), cooked meat (we use Bob Evans original or spicy sausage), your favorite pasta sauce and mix it all together. Throw all of that into a skillet and place in the oven for about 15-20 minutes to make it warm all the way through. Top it with parmesan and/or mozzarella and put back in oven for 5 minutes or until cheese melts. Simple as that and might delicious I must say. You can serve with a salad and some fresh bread.
Black Bean Burger with Baked Sweet Potato
Just looking at those pictures is making my mouth water. I love how she shares about the versatility of this burger. Discard the bun and throw it on a salad for lunch or add a bun and some serious toppings to make it a hearty dinner. Love it. Whenever we do burgers we almost always pair them with sweet potatoes fries, but I decided to just do a simple baked one this time.
Okay, time for some truth here. I post meal ideas to help you all out in simplifying the process of deciding on, shopping for and cooking your meals each week. Cooking can be made easy and quick, but sometimes you literally may not have time to make a meal before heading out the door (like us on Tuesday nights when we have house church). This meal is just for those nights. It’s a trick we found at Costco and actually really enjoy. I know not everyone has a Costco membership, but you can actually find them at most local grocery stores. Serve the lentils over rice and pair with some really good garlic bread.
So I must say, which I probably have before, I am no seafood lover. Actually, there’s very little seafood that I do actually like. I had my first crab cake when we were sampling caterer’s for our wedding reception and really enjoyed it. I have yet to make any type of seafood for dinner, so I’m pretty pumped to tackle this meal. Once again, Laney from Life is but a Dish has inspired me and made me believe this recipe is going to be delicious…so fingers it turns out as good as I’m imagining. When making your grocery list with all your needed ingredients, list them all on one list then go through with another blank piece of paper in hand and organize them based on what category of the store you get them in. This will make shopping so much quicker and prevent you from walking back and forth from the refrigerated section to the produce.
