I’m back and in full swing, somehow, even though both Ben and I woke up with bad colds this morning. It will be a week full of cooking so I have a lot of tasty things for you all.
Meal #1: Crock Pot cheesy potato soup with salad
Yummmmm! Just had this one for dinner and it was really tasty. I left out the ham, though. Nothing like slurping on a warm soup when you have a cold.
Meal #2 Our Favorite Pasta
Thanks to my sister-in-law, this recipe has been a major staple in our kitchen. Sometimes I throw different veggies in and also I use the spicy version of the sausage to give it a little kick.
Meal #3 Modern Beef Pot Pie
This recipe is in a cookbook, (One Pan Wonders) my mom gifted us at our wedding shower.
Meal #4 Flank Steak Tacos With Charred Corn Salsa
This recipe is also from the same cookbook as the beef pot pie. It was one of the first recipe’s we tried out of this cookbook and it has been the one we recently pull back into our rotation of meals.
I apologize for the low quality pictures, but I thought it may be easier to see the picture than for me to type it all out.
I felt really bad for skipping out on you guys last week so I thought I would throw something special in this week.
Bonus* Apple Pie (straight from my grandma’s kitchen)
The title isn’t lying, this recipe is actually a family recipe. I was hesitant to share, but figured it would be unfair to not share this goodness with you all. I’ve already made at least two apple pies this fall.
Filling:
1 cup sugar
5 tbs flour
1 cup half and half
4 cups of sliced apples
Topping:
1/2 stick butter
1/2 cup sugar
1/2 cup flour
1/2 tsp salt
pinch of cinnamon
Directions:
Preheat oven to 400
Mix sugar with flour, whisk in half and half. Put on stovetop and bring to boil. Stir at all time until thickens. Add fruit and mix together. Pour into crust.
Mix all the topping ingredients together until it turns into little crumbles. Pour onto of pie. Bake for 30 mins.
